LawDog Taters

4 baking potatoesolive oil
1 medium yellow onion
1 teaspoon dried basil
1 teaspoon salt

1/2 teaspoon dried oregano

1/4 teaspoon cracked black pepper
1 tablespoon dried minced garlic


Preheat your oven to 475 degrees.

Slice your taters into quarters lengthwise. Paint your taters with olive oil

Dice your onion.

Sprinkle the spices on the taters, pile on diced onions and then re-assemble your taters and wrap snugly in foil.

Place on low rack in oven and bake for one hour.

  1. I don’t get the “reassemble” step. Are you supposed to jam the onions in between the wedges? – NF

  2. Have each potato laying on a strip of aluminum foil, one wedge above the other.

    Sort of like 2 “=” signs, one above the other.

    Paint the quarters, sprinkle with the spice mixture and then pile a quarter of your chopped onion on top of the wedges.

    Grab the top end of your foil, and the bottom end, and bring the two to meet, so that your wedges are in the bottom of a foil cradle.

    Now, your wedges should more or less be where they were before they were cut, only with a big pile of onion in between.

    Roll your foil to keep the wedges and onion in place and place in the oven.

  3. This reminds me of one my sisters gotten me hooked on. cube a potato, dice an onion and a green pepper. toss together into an foil pouch with a 1/4 stick of butter and toss on the back of the grill for a hour with indirect heat. AWESOME!

  4. Tried it last night. AWESOME!! Now I have to try some of the others.
    BTW, have you considered running Martha Stewart off the air?
